How did the survivors come up with names for the special infected

Boomer - We, I think CEDA named it and that's why the second group of survivors called it Boomer. I could be wrong, though. As for original group of survivors, they could have found something similar, but we jumped ahead...?

Smoker - Well, because it has great clouds of smoke around it, I guess.

Hunter - It 'hunts' them.

Tank - Almost invulnerable and packs a heavy punch.

Witch - I honestly don't know about this one.

Charger - I don't think I need to explain this one.

Spitter - Or this one.

Jockey - A real life jockey rides horses or other animals (hopefully it remains at horses). A Jockey in Left 4 Dead 2 rides survivors.

Also, depending on the character, they use different nicknames for the special infected. For instance, Ellis calls Jockeys "back humpers", and Coach calls Boomers "Rolly-polys".

In the very first level, there is a CEDA meeting room in the hotel and there is a board that says "Boomer" on it along with pictures of the Boomer, so they may have named some.

As I rained blows upon him, I realized there had to be another way.

I can't remember right now, but I find that in the first levels of L4D2 they have rather long, vague names for them, and as you go on they start using names like Boomer, Witch, Spitter etc.

Also, I don't know if this is right, but I've heard that in old stories witches were meant to lull you into a false sense of security before they attacked, and they do look and sound a lot more human than some of the other special infected do. That's just a guess though.

I agree with this. The first time I played through (chose Parish of course, because I'm a moron like that), I was in the middle of the park and heard the crying. I assumed it was some survivor, so went to go check it out, only for the relatively nasty surprise of a very bitter witch. x3

Phoenix, you should have realized from the title. Parish/(Perish) lol

And yeah when I first played the game and heard the witch I thought it was some kid I had to rescue. Yeeeeaaaaah... that didn't end well.
