I guess they think that the same people that spend $350 a night (or whatever they charge) to rent one of their cabins during Bike Week should help cover the fact that he didn't have insurance.

Most policies will cover 100% of the actual loss, the way they get you is if you don't have "code" coverage. They'll pay for the value of what was there, but if you don't have code upgrade in your policy the money they pay for your loss may not be enough to replace the structure because of new building codes which add a lot of expense to replacement construction.
When was the last time you checked every line of your insurance policy? Yeah, nobody does, but they should, especially if you've just been sending them a check every year without questioning the coverage. Many people get burned (pun intended) after a fire loss.
