So the people who get attacked by vampires and die on the spot, turn into vampires immediately (provided there is anything left of them). But Jen is alive, and if she lives for another 50 years, she will live out those 50 years as a human, but turn into a vampire after her death. That is also what her husband tells her, and that is why she says: "Well, you better be there" (to stake me when I turn).
