Why are G and B always pimping Mama DiPandi

First they take an idea for a small restaurant where mama DiPandi cooks the food herself and Bill just has to ruin it and make it about him and his cronies. I'm not even sure if he paid her for the recipes. Now they want to turn her recipes into a cookbook, but of course, it couldn't just be a cookbook for her, Bill had to insist on putting some chef into the book as well. I wonder how long it will be before he ruins this one too. You would think Guiliana would be pissed over this pimping of her mother without giving her credit or profits but no.
