How do you edit player stats?

I only bought the game a few days ago,I usually get Pro Evo,but word of mouth on this FIFA was very good,and to be honest,i didn't fancy editing all the team and player names on Pro Evo like i've done every other time.Which makes my question slightly ironic,my PS3 isn't hooked up to the net,and if it's not,how do you edit stats?Some players stats are annoying me and I want to fix that.Lennon and Bale should be better,Carrick and Lucas worse etc,etc.I can edit stats down,but not up.Probably a daft question,but any help would be appreciated.
