I enjoy both, but keep in mind they're both very different shows. Both tell loose accounts of historical events with different presentations.
Spartacus tells the story of slavery in Ancient Rome. Yes, there is a lot of comic violence and explicit sex but there's so much more to the show than that. The series explores how dehumanizing slavery is to the human psyche and poor vs rich class struggles. The characters and stories become more compelling as the show goes on. One of the most underrated shows ever.
* Keep in mind the pilot episode of Spartacus is the weakest of the series and the early episodes are very uneven. By the midpoint of Season 1, you're good to go.
Vikings is more of a period drama and takes place in real-life locations. The show focuses on Viking hero, Ragnar and his transformation from a simple farmer to head of his people. We see the various aspects of Ragnar's life (dealing with his family and tribe) and his travels to foreign lands. The battles are intense.
Either show you choose, you're in for some quality television!
