Many of the Spanish characters we see speak English, do so with varying degrees of expertise. Besides this, the Camino de Santiago is an internationally recognized tourist route and the locals who get by on the tourist dollar are likely to speak some English.

Yeah, I'm going to agree with Spooky and say that in the parts of Northern Spain that deal with pilgrims, like most places that see lots of tourists, you will generally find people who at least speak enough English to get by.
