At the beginning the store they stop at is the River Market in Barryville, NY! It has to be, I recognize it from summers kayaking down the Delaware river.

The movie was filmed in Woodstock, NY. I know the area fairly well. Despite being near Kingston (the diner appeared to be located in Kingston, based on some nearby signs), it gets remote pretty quickly as you get up into the mountains.
When they get lost driving to the cabin, Cassy talks quite specifically about the route they had taken: "You were on 209, then you turned onto 213." This would put them on a route toward the southern shore of Ashokan Reservoir (opposite side from Woodstock, but whatever). Beautiful area. Entirely accessible by car, but without one you could easily be completely cut off.
Mind you, they took the strangest route from NYC to Kingston I've ever seen. All they had to do was go up the Thruway, so I don't know why they were driving around on those terrible, winding, snowy, stalker-infested little roads all the way from the city. :-)
