I just watched it and I am still at a bit of a loss as to how that happened myself.
I guess the answer - as far as the movie goes - is that Sara was subbed in and was directly across from Katie and they ended up having a bit of a fight which distracted her and she didn't return a spike.
But the real answer is that I have no idea how the Deltas managed to beat the Kappas.
