The ending, a possible plot hole

As we can see, Jack took delight in emotionally torturing the couple which is a sociopathic trait, yet the whole point of the movie was that he did what he did to avoid spreading the disease, which totally contrasts his personality. Am i missing something or we're in front of a plot hole.

I agree. I figured there'd be a 'twist' but this wasn't the one I expected. Like you said, nothing about his behaviour in the rest of the film supported this motive.

I think the plot would have been better if he'd won their support straightaway (by being a sympathetic character instead of a creepy psycho) and they unwittingly helped him fight off the military attempts to rescue them before Martin got sick and the truth revealed.

That would've been a better twist. I liked the movie but it downplayed its own potential.

I never saw him as sociopathic, just very messed. He was already a criminal facing time in prison to begin with. Then he was experimented on by the military, unwittingly killed his wife and then killed two more people after having infected them with a horrible virus.

By the time he got to martin and kate I think his mental stability had been broken down by all the truma he'd been through. The times when he did become violent and/or abusive were when he was emotionally or mentally stressed e.i. talking about his wife (thus bringing up his guilt, anger and grief) or when they tried to escape (which could make him responsible for yet more deaths.

Weird as it sounds, I think in the end he just wanted them all to have a nice togther. He knew they were all dead, no matter what they did, so I think he just wanted a peaceful last few days.
Please consider me as an alternative to suicide

He was messed up, that's for sure, but he wasn't merely reacting to their escape attempts and her questions about his wife.

He realized something wrong was going on between Kate and Martin and started to ask questions and make remarks that he knew would upset pair, and it was way before Kate's comments. He also read Kate's journal. None of this related to the violence he needed to use to avoid them both escaping, it was obvious he simply enjoyed making them feel unadequate.

the couple were more screwed up than him, and he wasn't trying to save the world, he was just trying to save his ass from the army.

i mostly will not be able to answer your reply, since marissa mayer hacked my email, no notification

Indeed, the cost of creating the plot twist was incoherence in Jack's behavior/psychology.
