Just watched this again, it appeared that rooster shot 3 of the 4 men on horseback, one of the men took cover by straddling the side of the horse and was never showed again

That's right, once the first guy was blown out of his boots, he lost his will to fight and tried to use the horse as a kind of shield. Rooster's story earlier about riding down 7 men and getting them to scatter foreshadowed that a bit when he said something like "he don't have time to think about whose riding with him. He's thinking about himself and how to get clear of that wrath that's about to set down on him"
