The film did not do a good job of showing this, but it's clear in the book that the Dollys are a crime family and probably have been since the Civil War. Almost all their men are named either MIlton or Jessup -- the family calls them by nicknames like Teardrop and Thump -- so that the law will have a hard time keeping track of them. And people who ask too many questions end up "et by hogs or wishing they was." Meth cooking is just the latest criminal frontier; I suspect Thump makes his money receiving stolen cattle, hence the scene at the auction.
They're like the Mafia-- don't mess with them.
