So during the final battle after batman takes off, superman gets all pissed and starts beating the crap out of luthor. i couldn't help but wonder how the hell did he become resistant to the kryptonite all of a sudden? in the previous scene with metallo, he couldn't even walk properly after being exposed to the kryptonite and now he is flying after luthor, shooting lasers from his eyes and stuff. did i miss something from the previous scenes that would have explained this?

Superman in both the cartoons and comics holds back a lot. In fact Superman suppresses so much of his power that he actually has abilities he doesn't tap into from fear of cutting lose. Superman has used his insane will to use a Green Lantern ring, help move a planet and resist the effects of kryptonite several times. When he didn't want to fight Luther he took him down.

A perfect example of Superman holding back, was when he was fighting Lexś Loonies, he was getting his butt handed to him, then heś finally like, enough of this, turns into a freaking tornado & wipes out the lot of them.
