Would you have felt good because he showed her respect or would you have been pissed for him leading her on and making her feel like sh**?

He did turn her down for sex, and he was right to do so since they weren't married yet. She was in the wrong for attempting to fornicate with him. Edward has demonstrated a respect for women by refraining from having premarital sex with them; there's nothing respectful about treating women like semen depositories.

Bella was really convinced that once she was turned, the sexual feelings she had for Edward would be gone...she had to have sex as a human at least once with Edward before she was turned.

I thought that he turned her down for sex because he was afraid of hurting her while she was still human. In the book, Edward says it is too risky for them to have sex because he is 1,000 times stronger than her and could crush her if he lost control even for a split second.

I don't think he turned her down because they weren't married yet.

Maybe I'm missing something?

Edward's reason for turning Bella down was two-fold. 1) He feared hurting/killing her. 2) He came from a different era and wanted to leave one rule unbroken.

Considering they did end up having sex with her as human, obviously he wasn't really all that afraid.

He was just a tease.

I was already annoyed when he refused after the first night. Because it clearly wasn't as bad as he made it out to be. She only had a couple of bruises.

This is the guy who pulled his entire family out of state when his brother nearly ate Bella at her birthday party.

I'd say he's mellowed somewhat if his reaction to her bruises wasn't more extreme, considering his past over-reactions to Bella's safety.
