all of your upgraded weapons and whats in your inventory for the next time around???

Yup. The only caveat is, to change difficulty you need to start over from scratch. That means if you've got the urge to take on Insanity mode (only available once you beat the game), then you're gonna have to get used to stasis stomping and running RE1-style to save bullets and health.
