When the Apache threatens to blow Juan's cover, Juan threatens him in turn with showing something he (Apache) wrote to Malamadre. Given the ending, I assume it was something that implicated the Apache in collaborating with the authorities. However, does anyone have a more specific idea of the content of this document? If Juan hadn't even started working there, how likely was he to know about their mole inside the prison, down to such details as the papers he kept? Did I miss anything that would explain this?

At he beginning of the movie, when the two prison guards give Juan a tour and explain how things work in prison, Armando (the guard) shows Juan a piece of paper with a note "Hierro Lavabo 233". They tell him that Apache is a snitch and in return they let him run his business in prison. Apache gave them a note saying where to find a hand made musket, and they show it to Juan.

@bad-intentions did Juan keep the piece of paper or did he give it back to Armando?

I think it wasn't shown. As he is holding the piece of paper there is an explosion and a part of the ceiling falls down, you can't see if he dropped it or if he put it in his pocket.

I am guessing that he didn't have it, and that he was bluffing when he was talking to Apache. I remember that when he woke up in cell 211 he flushed his wallet and all his possessions including his shoelaces.

It was somewhat shown. He returned it back to Armando. If you have a chance watch that part again you will notice the same thing. Even though they don't show him handing the paper, the body language is clear. He is returning the paper back to Armando.

When I asked you the question I was confused since he bluffed with such conviction (to Apache) it made me think he still had that piece of paper, plus I had not re-watched that part of the movie.

Btw your guess was still correct!
