Late response to your original post. I'm ashamed to say I've only just watched un prophète... Bad me.
I want to re-iterate Mr/Miss Clothes-Off and say that "Tell No One" will probably sort you out, for starters. La Piscine is a thing of beauty too.
Considering film was invented by a frog back in the day, they have a well-subsidised industry and go to great lengths to curate the cinematic arts - I'm sure you'll find one or two other films to watch.
Maybe google "french film director" and you'll find a couple. I fell in love with french cinema after watching things like Jean de Florette, Manon des Sources, Pierrot le Fou, Les 400 Coups (and all Truffaut), Breathless, Jour de Fête (again any Tati), Besson (The Big Blue, Nikita, Leon, 5th Element), La Haine, Delicatessen, Amélie... Endless list. Recently there was Polisse too. Get a few under your belt and you'll see French influence in so many english films moving forward. If you're ready to get geeky, be sure to watch "Caché" by Haneke and "Copie Conforme", which will really make you re-discover cinema and the nature of story telling - it's alright not to enjoy them, they're a bit *beep* (Don't forget to check out cinema from all over the world too.
The other films mentioned in this thread are good too, I'm not a prude, but some of theme are a bit "Cinema du Shock". It's the subtle ones that will actually floor you and stay with you for years to come.
Anyway, enjoy... and don't limit yourself to post 1990!
