Considering that there were absolutely no signs that "she" was a former "he" such as deep voice, big hands and feet, broad shoulders etc then, as far as I'm concerned, she is a she. So yes, I would do the deed.

A transgender actor playing a transgender character is more of a very basic verisimilitude than a "gimmick".
Lastly, having a contemporary transgender person playing a male character who was transformed into a woman using fictional scientifically advanced plastic surgery methods that don't actually exist, would defeat the object.
That isn't to say many transgender people aren't incredibly convincing, just that it would've been incongruous with the themes of the film.
Why do people even care who anyone finds attractive and wants to have sex with? As long as you're attracted to adult humans, everything else is immaterial.
A vagainaplasty is not a large scar, it's not scar tissue for a start and if it were then it wouldn't work. Post op results tend to be highly successful and most gynaecologists can't actually tell the difference without an internal examination higher up inside the vagina (obviously no cervix etc). You could easily have sex with a transsexual woman and never know the difference, so you may as well get over it and accept the fact that trans women exist in life and that they often look normal these days, especially if they transitioned from a young age.
Furthermore vaginaoplasties aren't just done on transwomen many are needed for women who have not grown a fully formed vagina due to birth defects. Sometimes the vagina doesn't form in utro properly.
To answer the OPs question. Why would I care if she looks female, acts female, identifies herself as female and I can have sex with her just the same? There would be no real difference. Obviously you couldn't have children with her, but then lots of women can't either.
The real problem would be that Vincent never really saw himself as female, it was a forced sex change and so obviously he doesn't identify as female. It would be impossible to have a relationship with a person who sees themselves as a different gender to what you are attracted to. So I wouldn't be attracted to Vera not because of her body having once been male, but because Vera doesn't identify truly as female.
