How did he change the voice???

Magic obviously.

None of the science around the sex change should be taken seriously.

It is however possible to alter vocal chords via surgery, which obviously he'd mastered, but it is basically fantasy science, same as he seems to have made the feet smaller, and changed the victim's eye colour.

I think they should have had a scene in the flashback section, where he was working on her voice, just so we can sort of get a grasp of it.

Simple, regular injections of estrogen combined with a lack of testicles can give a person a much more feminine voice.

I've seen (heard) the transformation of transexuals from manly voice to feminine. It's certainly possible. In fact, I've observed it with estrogen injections alone, with the testicles still in place.
