Where was Di heading after the movie?
Was she trying to take Fiamma's place or just wanted to get away from that school which she now considered tarnished?

I thought Di was simply going off to leave the school behind. perhaps going home.
I felt Miss G. was simply taking her "leave of abscence" due to the tragedy of what happened to Fiamma. as the headmistress said she would not lose her job but come back after a time.

The film does not show us where Di was going, so it is open to interpretation. I like to think that she intended to visit Fiamma's grave. She was holding the atomizer--a gift from Fiamma that she cherished. And the book was one of her own cherished belongings that the intended to leave at the gravesite.

I might have to go back and review that scene again. I don't think the artwork in the book is much of a clue to its identity. There were some words inside the cover, not in English. In my quick glimpse of it, I thought I saw two words. I need to look at the second word again. Or course the phrase might relate to the publisher, not the title. But now you have me wondering.
You are right. The book was, in fact, the book that Fiamma was reading in the stable. But when the girls tell her to leave the school, she leaves with the book. Di would have acquired it later.
I reviewed the final scene. Inside the cover is written "Biblioteca Dei Ragazzi", which means "Children's Library". At the bottom of the page is "Italiano". So this provides no clue to the identity of the book. But it suggests that Fiamma could read Italian. The book would be an exotic belonging from Di's point of view. For her, it probably evoked feelings of excitement about the outside world.
Yes, Di takes the book from Fiamma but Fiamma takes it back at some point. Di would have taken it from Fiamma's belongings after her death.
Also, inside the front cover, the book had an illustration of girls in a circle holding hands. I thought that was symbolic of the notion that ultimately Di rejected Miss G but still valued her team (and her friendship with Fiamma).
I think you're absolutely right that for Di, the book would be an exotic belonging, representative of the wider world that Fiamma had traveled.
The book being in Italian might just be a minor goof on the part of the filmmakers. In the novel on which the movie is based, Fiamma was Italian.

Di knew that Miss G was responsible for Fiamma's death and saw her getting away unpunished. She also realized that The Matron too,wanted to brush aside the murder,as that would harm the reputation of the School and probably her job and a cushy life. Hence I feel Di left for China,where she would somehow meet an old man who would be cruel to her in the beginning,but even so will tutor her into becoming The ultimate Martial Arts shenshen. She will then be back to avenge Fiamma's death by killing the Matron and then proceed to hunt Miss G wherever she be hiding and finish her off. In the end,she will visit Fiamma's grave and leave The book and The perfume bottle on her gravestone and walk away into the sunset.
