The reason is Hollywood's bias against older actresses. It is not about whether or not Redford is still "hot". It is acknowledging that Hollywood SYSTEMATICALLY pairs men over 45 with women who are around 20 years younger.
As one of your respondents mentioned. Yes, it happens a lot. But that does not make it right!
This Hollywood practice does not reflect reality (see link below for metrics) and it hurts the careers of "older" actresses. With "older" starting at around 35 nowadays. Sigh. I am personally getting very tired of this.

All very true, but...
Hollywood is just displaying a reflection of societal values. Any man middle-aged or older who is shown with a wife who looks anything close to his age isn't regarded postively.
An older man with a smart, good-looking and youthful wife is just movie short-hand for "this character is an intelligent, successful and confident man or he wouldn't have bagged a twenty-something babe when he was in his fifties". I agree that is stupid, but acknowledge that it isn't entirely the fault of the film makers.
A similar question, why are so many minor supporting roles, usually a person of authority such as a judge, lawyer, doctor, police officer, counselor or senior manager, so often cast with minority, usually black, actors and actresses?
