Could someone with Hindu backround tell me when a person has blue colored skin in the illustrations what does it mean ? Holy or something else ?

One of the incarnations of krishna(or krishna himself) mistakenly drank poison while he was an infant. That has made him blue or dark blue. The illustrators colour the rest of his incarnations as blue also.

Yes, the "blue colour" is added just to remind the people about a particular incident in the life of an avatara; that poison might turn the avataras blue but it cannot kill them.

Mostly, it depends on the illustrators mood and what particular event he wants to convey. eg: Shiva wife, "parvati" is a beautiful women but many of her avataras are violent, demon killing, blood drinking super-duper angry women like kali and durga. Some illustrators like to portray her as "parvati", the women who mesmerized shiva out of his celibacy lifestyle. Others portray her as "kali"; the hell has no fury like a woman scorned type avatara.
