20,000 in one night?


Why was 20k so hard to make for a high class restaurant like that one?

That restaurant seemed like a $50 tab per person would not be out of the ordinary.

Under this presumption they would only need 400 (20,000/50) customers. I would guess that there were 6 hours for the competition and 6 waiters/waitresses. 400 customers would mean just over 11 people per hour per waiter/waitress. Remember that is 11 people not 11 tables. A party of 5 would leave 6 left.

the only thing i can think is 20k profit not gross?

but then again using your math 20k divided by 6 waiters is over 3k per waiter which averaging a 10% tip would mean a little over $300 in one night per waiter which is really good money, so i dont know maybe someone with food service industry knowledge can shed some light

I thought it was weird that the restaurant only accepted cash. It works for the plot so all the revenue is cash, and I can see why certain businesses would only accept cash and not checks that could be bad & credit cards which often involve hefty processing fees, but people tend to spend more when paying with a credit card and a high-end places should make enough to absorb the fees & make accepting credit cards worthwhile. Furthermore, a place like that would probably have a hefty bank account to pay the regular bills, do the payroll, pay for food orders, etc, so couldn't the champ go to the bank or an ATM and take out a bunch of cash from the business's account to help pay the Yakuza in addition to what cash the restaurant brings in that night? And if they only accept cash, where is the revenue from the previous night? Did they deposit it already & keep no cash on hand in a safe somewhere?
