One slight goof, maybe

So, bake lady tricks Wallace into falling for her by, possibly, deliberately have him save her from a broken bicycle.
We see Gromit try the brakes and they worked just fine, implying there was nothing wrong with the bike... but on the way down the hill, we saw her try the brakes to no effect.
So, did they fail because she didn't try them and they left that scene in by accident... which begs the question of "did she know a crocodile would be involved in her plan?"
Or
Did the brakes not work because she was fat? Which is in poor taste for Wallace and Gromit.

I think it's a joke

I had assumed that she was only pretending that they didn't work--squeezing them, but not hard enough for them to actually apply on such a steep hill?
I don't know that she thought it through as far as the crocodile being directly in her path, since maybe she figured Wallace would be able to stop the bike long before the zoo.
But I suppose the "she's too fat" could also have been the explanation. I mean, that's the reason she's not the Bake-O-Lite girl anymore, and is on a murderous rampage against all bakers. She couldn't control her consumption of baked goods. xD; It's a joke, but I don't think a deliberately malicious one against fat people...the idea of someone being too heavy for something has pretty much always been a comedy staple, including for heavy comedians.
