I think they did it to introduce Miyuki's character and show how she always explains things in great detail. and besides. why not?

I stopped watching halfway through. Is the rest of the series like this or is it worth continuing on? I guess I can see the sense of humor behind the Endless Eight here.

The whole series is great, as long as you're aware of some Japanese culture, video games, manga and anime because the series makes a lot of in-jokes to them. A lot of humour also focuses on over-thinking the smaller things in life which are pretty relatable and some banter between the characters is usually funny too. It's not a typical anime comedy with in-your-face gags so maybe the sense of humour described might not be for you. If that's the case, fair enough and to each their own, but I'd suggest at least watching a full episode. :)
