Someone explain the part at the end when he is...(spoiler)

At the end of the movie when........ spoiler...............Matt is tied to the chair and that guy is talking to him there is something I don't understand. Why does the guy cut open and then partially tear off Matts shirt, exposing his chest? and then why does the guy then feel his chest? I don't get it.

Just watched it last night. He was testing the meat for tenderness before slaughter.

Yeah, i think he was just 'tenderising' Matt before his daughter/sister/niece dug in.
