When you board the flying dutchman as Will and you dip your sword into the oil & light it on fire, WHAT THE HECK DO YOU DO AFTER THAT?!!

you most likely light a cannon...
I can't remember which level you are speaking of...

there is a door near the barrel, press the button (A on 360) by it and it will clear the seaweed
