Ken (the japanese guy) says the symbol on his collar means Hachi (good fortune) and Parker names him Hachi therefore but what's the "ko" attached to the end of the name?

Because that was the real name of the 1920 and 30's dog in Japan.

Hachi means eight, and the suffix kō means affection.
The real dog's name is Hachikō. This dog has not only his own statues, but also a whole wiki page. https://en.wikipedia.org/wiki/Hachik%C5%8D

I thought it was because he was number 8
in the litter and was the runt.
