This Season vs. Previous Ones, other stuff as well

So I find it interesting how different the format to this season is vs. the previous ones. Patti use to set up mixers and let the clients meet about 20 people or so and then from those, pick a few to talk to and then set up a master date. Now, Patti just selects 2 people and sets them up with the client. Additionally, before setting up the clients, now she's sort of setting them up and pointing out their failures. Before, she would point out the failure after the mixer. Just find it interesting to note the differences.

Also, why are Destin and Rachel considered assistant matchmakers while the other woman is a senior matchmaker? Weren't Destin and Rachel working side by side with Patti for a long time before they left the show. Is this punishment for them leaving that they are now considered "assistant level"?

Also, for the last episode, I knew that philly jewish girl and guy weren't going to work out. Clearly, the guy was better suited for the life coach woman and I'm guessing the philly girl might have been a little religious or wanted to marry a jewish guy, so if the guy wasn't going to convert, I was guessing they wouldn't work. But that was more of a gut feeling.
