So this actor guy, Steve Byrne, I'm not sure if he can marry people. I don't know if he's ordained or anything. It would be funny if the show went through all this setup and not even get Steve ordained.
So if he's not, then I guess the couples aren't officially married, right? What do you guys think? Have you guys even thought of that?

Weddings are official. The priest/pastor/etc has legal authority to marry a couple and to sign the legal documents.
I don't think this Byrne guy has that authority. Probably got officially married after they reveal the crashers or behind trhe scenes.
