Did I miss something? What happened to the Sheriff? I was sure he'd' turn up at the end of the movie to reveal that he was in on it.

You must have missed it. When Zack and Bryan were in the shack returning the film, Bobby Shaw came upstairs with a body bag on his shoulder. He drops it behind the plastic sheeting. Later, Kate is there and opens it up to discover the sheriff. Kate hears Zack downstairs and when she goes to the outside door, Bryan tells her to get the sheriff, she says "upstairs in a f@#$ing body bag".
If I remember correctly there were pictures or a video of the cop's dead body. The fat slob murdered him.
