What I didn't get was WHY would they need to PERSONALLY meet with Hitler to get his signature on the "amended" Valkyrie papers, when all they'd have to do was FORGE the damn thing.

It was a bit more complicated than just getting Hitler's signature on a piece of paper. The new Valkyrie document needed to be copied and distributed to units across Germany and Europe, through official channels, replacing the existing version as the Fuhrer's standing orders. To do that, they needed Hitler to personally view, approve and sign the document, and his chain of command had to be aware that new orders were being issued. They couldn't just distribute a forgery, claim he'd approved it and hope no one would notice.
