The girlfriend was just a temporary one-off girlfriend for one episode. I think they referenced her in a later episode with Gibby saying she was in Europe or something and that they weren't "exclusive".
The fact that Emily Ratajkowski does nude modelling didn't have anything to do with the fact she never came back. The writers just didn't need the character to come back.
