The three highlighted personalities fit easily into gluttony, wrath, and pride. And you could guess that one of the others was greed, guiding his thieving and gambling. Despite them not being explicit about it, was that the intent?

Exactly. A movie about personifying hidden symbolism wouldn't expect an audience to infer any kind of historical or moral references beyond the surface of what's actually shown. Giving the villain 7 personalities must be completely arbitrary, despite 3 of them coincidentally being embodiments of the biblical deadly sins.
