why did he have to combine the 10 entrees to not fail?

the mission said 5 entrees, so wouldn't he only fail if he didn't deliver 5 entrees? why was he making a big deal about what was written on the whiteboard? isn't that just their planning menu and changes quite a bit sometimes anyways?

I think he done that as a challenge to himself to see if he could pull it off.
