Why all the games?

I know, I know. It's a movie and this is where the mystery lies, but once Stephen Dorff was in the room with the tunnels, why all the pretense that Zahra didn't know what was going on? Why not just abduct the guy, sedate him and remove the organs? Did Zahra & company just enjoy the game?
