Does anyone know the name of the song that Paul played in his concert? So familiar - can't place it.

I think Malaguena by I think Albeniz.

I'm pretty sure the song you were referring to is 'Asturias' by Isaac Albéniz (at least it is in the Spanish-dubbed version of the movie).
