She's 68??! When did that happen?

Raquel Welch isn't saying that she's 53, Charlene is saying that she's 53 (actually Saul is saying that Charlene is 53 - Charlene is saying whatever age she thinks is right this time). It's called acting.

She's just turned 67, she'll be 68 on 5th September this year. The whole idea behind the age thing is that Charlene LIES about her age in the show. That's the joke. She tries to pass herself off as much younger and of course no-one believes her. Raquel is 67, she admits openly to being 67, but Charlene (in the show) tries to make people think she's much younger. As has been mentioned in this thread it's called 'acting' and will be a running joke in the series. Mind you, for 67 she does look great.
