why is it Game of Thrones - when there is only one Throne in the whole Show?

The title of the show - and the book it's based on - refers to the general concept of lords (and ladies) seeking power by any means necessary. It doesn't refer to a specific throne. Jorah Mormont explains it thus in the book:

“The common people pray for rain, healthy children, and a summer that never ends," Ser Jorah told her. "It is no matter to them if the high lords play their game of thrones, so long as they are left in peace." He gave a shrug. "They never are.”


In the context of this quote, Jorah is speaking of common people and high lords in general, not just the ones in Westeros.
