They are both based off the game. Yukito's character is essentially the same but it varies slightly. Since you are only on ep 3 I don't want to spoil it for you. And you can buy the first volume from ADV films in the US.

Do you mean Kanon? It's not a spin-off but the game was mad by the same company that made Air. It was made into an anime in 02 but was 13 eps and wasn't great. After Air was made the same company decided to remake Kanon(Usually called Kanon 2006). They made it into a 26 episode anime which is far superior, IMO, to the original.
