This is what it says on this site and Wikipedia, but if you look at the american blu-ray, you'll see they've included a lossless Mandarin track and a lossy Cantonese track. Why would they have given preferential treatment to Mandarin if it was not the "original language" of the film?

It sounds like everyone except Stephen Chow is dubbed in the Cantonese version.
In the Mandarin one, it doesn't sound like Chow's voice.
Stephen Chow, Lam Chi-Chung, the teacher and a few others dubbed their own voices for the Cantonese version. Sony is very specific to the Mandarin version being the official audio track because simply put, the leading actor (in this case, Xu Jiao) and most of the other main characters speak Mandarin. Stephen Chow is more of a supporting role so it would be fine if he was dubbed by someone else which is usually the case for Mandarin language films. (He has a heavy Cantonese accent when speaking in Mandarin. And Mainland/Taiwan are more accustomed to his dubbed voice (usually dubbed by the same voice actor).
