Sorry, but I can't help you with your question, but I have one.

After touching the people in the morgue, reviving them, why did the Pie Man touch them again, permanently killing them? Except in the cases of extreme mutilation, why didn't he just walk away, and allow them to live? Am I missing something here?

If he allows them to live, an "equal" life gets taken away. So, every morgue victim that comes back winds up being "exchanged" for a (nearby) soul of roughly the same life force. When Chuck is revived and he lets her live, the nearby funeral director bites the big one (remember the private eye who Ned works with gets freaked out and angry when he finds out that *he* might have been the victim exchanged for Chuck).

In a nutshell: one person is dead either way.
