VG says they needed to take it off for continuity, since he wasn't wearing it in the flash forwards. Then the explanation he uses within the show is that he didn't want to wear it, since it came from Jesse. Continuity was the real reason.
Ricin was supposedly put into the single pack that was on the table, before they got there. We ecpect he only had to add it on one table, since she typically sat at the same table...very "schedule oriented", is how Walt described her.

The only people who knew he owned that watch were Jesse and Skylar. I saw his leaving the watch as his disconnecting himself from any sense of pride in what he had created. Remember he liked the watch and was proud of it because of what it symbolized.
Funny how sometimes the viewers explanation are more thought provoking than the writers. VG's main reason for leaving the watch was continuity...

And if you watch that scene with the Stevia, I think this is the only packet of Stevia in the box. There is sugar and Sweet-and-Low and stuff, but only one Stevia (and I think she even asks the waiter for more). So yes, Walt must have gotten there earlier and planted it; he knew where she would sit, and he knew her patterns.
