Although the last time I was in Cairo was in 1970, we stayed at Shepheard's Hotel and the view from our balcony/terrace was pretty much the same as in the movie (except for no dhows on the Nile). Does anyone know if any of it was shot there?

That's correct. It is Shepheard. Good memory, it's been 40 years!
