They missed one plot hole.
Recall how long it took for Hiccup to design Toothless's tail/the controls so that he/Toothless could fly. They needed to work TOGETHER to fly.
Now Astrid is up a tree, and agrees to ride Toothless back to the ground.
Tootless goes on wild out of control flight for several seconds. Fast ascent/decent, barrel rolls, skimming the water etc. Hiccup is yelling at Toothless so they're totally out of sync. In other words, they should be crashing at this point. In the audio commentary, they admitted the out of control flight was a gigantic plot hole.

Not necessarily. Astrid doesn't know that the boy and dragon are in a symbiotic relationship, a fact that Hiccup may be using to his advantage. "Oh, no, Toothless! Don't frighten Astrid til she apologizes! What are you doing all by yourself!" 😉
Hiccup's inventions enable Toothless to fly, they don't force him to go only where Hiccup wishes. We'd already seen the dragon flying his own way, and that once the tail is set, the dragon can fly within certain parameters. I'm also not convinced that the dragon is in fact fully disfunctional without a rider, especially at low speeds.
Anyway, it's in Hiccup's best interest to keep the tail straight, regardless of the maneuver.
