The best way to find out more is to visit the agency you want to apply for. They will likely be more than happy to give you all the information you're looking for. I highly stress scheduling a ridealong with an officer. Another thing to check on is whether they have a Citizen Police Academy. I was in one of these before applying to the department. They are very informative on how the department operates, trains their officers, etc.
Every department trains differently. The LASD doesn't require the passing of any physical tests before acceptance into the academy. The department I'm in the process of applying for requires both the running of 1.5 miles in 14 minutes and the successful completion of a suspect chase obstacle course. Some departments require more, some less.
