The woman would never be with a guy like that

Seemed like weird casting to me. Seemed unrealistic that an absolutely stunningly gorgeous, talented woman would be with a guy like Martin. I know of course it's possible in real life, but seemed more like bad casting to me.

Martin's character is supposed to act sort of sexy sometimes, like walking in the door and swatting his girlfriend on the ass, then supposedly gettin down on the couch, but it seemed fake, since his character is pale, soft, and milque-toastish, and when he goes to kiss her it's a childlike little peck-peck-peck, and he handles her physically timidly, yet the actress clearly is directed to act like he's sexy...but he's not, at least not in the masculine way she's supposedly responding to.

Just seemed a little weird and uncomfortable to me.

I'm almost positive that these are the exact things that Martin is asking himself. She's beautiful, he's average. Despite being a surprisingly funny, charming guy (I expected him to be your normal cinematic sad sack), he has a very poor view of himself. I imagine that he can be a very loving, affectionate man, which is why she's with him. However, as his professional life hasn't really materialized (which is often how a man is meant to define himself), Martin's self confidence has slowly dropped, leading him to believe that he couldn't possibly deserve such an amazing woman. Her frustration with his self image truly conveys how much she cares about him and, as she states at the end of the film, just wants him to be happy.
I think the filmmakers were very aware of the disparity between the two characters, and I think they dealt with it realistically and gently.

An A&R rep from a record label can be with a stunningly gorgeous, talented woman anytime he wants. He has the requisite status and power to be attractive to a lot of women, and it's a job in which one encounters a lot of women who are talented. I don't see this as a stretch at all.

Martin is timid with the woman because he is conflicted. He wants to be with the super-sexy, talented woman, but he loves his girlfriend and values his relationship, so he can't bring himself to dive in with reckless abandon. In fact, he doesn't go through with it. He chose his girlfriend over the singer.
