Do they mean Dr. Uzuki or is this a new guy?

Someone made a mistake. There is no Dr. Azuki in the game.

Shion's father's name isn't Azuki, it's Suou.

His full name is Suou Uzuki. I don't think he's a doctor though.

I talked to someone that played it and knows more Japanese than I do. He says that Suou Uzuki is referred to as a doctor. Maybe it was just an error in your script?
