I watched all the seasons when they were on, but I can't remember if it was cleared up how/why Claudia Brown becomes Jenny Lewis?? I know that Cutter (and Helen) were the only one's who knew something had happened due to them going into the future, but why/how did Claudia change?....And why did no one else???

This was never really explained, neither what exactly changed, or how or why it changed Claudia "into" Jenny.
Cutter tried to explain the concept to Jenny one night but was interrupted by her fiance. What he said was basically, "Imagine there was another world, and something was changed in the past, so that some people who had lived were never born and other people grew up with completely different lives."
And that was pretty much it. Jenny finally did become convinced that there was *some* sort of truth to what Cutter said because she found a picture of him and Claudia that had been in his wallet when he and Helen had been in the past and the present world was changed. There was no acceptable explanation for why Cutter had a picture of a woman who was her, but not her, except for what Cutter had told her. She left the show confused, not knowing what to believe, and of course not being able to talk to Cutter about it because he was dead.
When Stephen talked to Cutter about this right after Jenny's introduction in Series 2, and noted the ridiculous coincidence that the past was changed so far back and *only* Claudia/Jenny had changed, Cutter pointed out that they didn't know exactly what had changed in the past, nor what else was different in the present.
There could potentially have been millions of people that had changed like Claudia/Jenny, only Cutter didn't know them. Or maybe the Permian world was not where Claudia/Jenny's life changed - Helen had so many irons in the fire and had so many secrets, she could have changed something 50 years ago that altered Claudia/Jenny's course while not significantly changing the present otherwise and Cutter would never have known, though the heavy implication is that the introduction of the 2 baby Future Predators is what changed things. Helen indicated to Cutter that the change had taken place in the Permian, but who knows what could have happened when Helen Cutter is involved!

Claudia to Jenny was not the only change. The A.R.C. was changed. Lester had an assistant we never knew before. We have no clue just how many changes actually occurred. We only can account for the changes that were relevant to Cutter.
