why did the ramen make her laugh?

early on in the movie, Murphy and the Japanese business man both started laughing when eating. I didn't get it.

I think the implication is that the ramen chef can provide emotions to the customer through the ramen. In the scene you reference Maezumi saw the one Japanese customer was very down, and tried to lift his spirits with the ramen. Abby got some of the same batch and also felt it as well. Compare it to the later scene after Abby's visit to Maezumi's mother where she is told to start by putting her tears into the broth. She tries her latest broth out on some of the regular customers who start feeling sad for various reasons.

That is a reasonable explanation as I didn't quite get that part myself. Sort of a setup for a later point in the film.

Agree with you. That also confused me.

I got that when she put sad tears into her ramen, it made those eating it sad.

The earlier ramen he'd made, many people were laughing. But he didn't seem to have any jolliness to put into his ramen, so it didn't make sense.
